PREP
Cut off the top of all 4 peppers and pull out the core and the seeds. Remove any seeds left over. The peppers are easier to fill when raw.
METHOD
1. Preheat oven to 400°C. In a small saucepan, prepare rice according to package instructions.
2. In a large skillet over medium heat, heat oil. Cook onion until soft, about 5 minutes
3. Stir in tomato paste and garlic and cook until glossy.
4. Add ground beef and cook. Cook until brown.
5. Stir in cooked rice and chakalaka. Season with salt, and pepper. Let simmer until liquid has reduced slightly, about 5 minutes.
6. Place peppers cut side-up in a baking dish and drizzle with oil. Spoon beef mixture into each pepper and top with cheese, then cover baking dish with foil.
7. Bake until peppers are tender, about 35 minutes. Uncover and bake until cheese is bubbly, 10 minutes more.
8. Serve & Enjoy!
