INGREDIENTS
500g OBC Chicken Gizzards
2 tbsp OBC Cooking Oil
1 Heaped Tbsp OBC Paprika
1 tsp black pepper
1/4 cup chopped tomatoes
1 Large Onion (finely chopped)
2 tbsp Garlic (Optional)
2 tbsp White Vinegar
Salt, to taste
Bay leaves (optional)
METHOD
1. Trim and wash OBC gizzards thoroughly, add salt and boil them for at least 1 hours until they are nice and tender, keep topping up the water and skim any scum formed as they boil.
2. When cooked, add OBC cooking oil in gizzards. OBC Paprika, black pepper and bay leaves and fry until gizzards are brown.
3. Add the vinegar and fry, then add onions and garlic, and cook on a medium heat until onions are nice and soft and have changed slightly in colour.
4. Add tomatoes and fry further making sure they are cooked
5. Add 1/2 cup of water and simmer over low heat for 20 minutes
6. Let it cool off. Serve & Enjoy!
