INGREDIENTS
2 cups All-Purpose Flour
4 tablespoons OBC Brown Sugar
4 teaspoons Baking Powder
1 teaspoon Salt
2 Cups OBC Milk
4 tablespoons of OBC Cooking Oil (for Batter)
2 Large OBC Eggs
2 tablespoons OBC Cooking Oil (for cooking)
Assorted Toppings, such as butter, maple syrup, honey, jams, preserves, whipped cream or chocolate syrup
METHOD
1. Preheat oven to 200°C; have a baking sheet or heatproof dish ready to keep cooked pancakes warm in the oven (optional).
2. In a small bowl, whisk together flour, sugar, baking powder and salt; set aside.
3. In a medium bowl, whisk together the milk, cooking oil and eggs. Add dry ingredients to milk mixture; whisk until just moistened (do not overtax; a few small lumps are fine)
4. Heat a large skillet (nonstick or cast-iron) over medium heat. Moist the skillet with cooking oil.
5. For each pancake, spoon 2 – 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round shape.
6. Cook until the surface of pancakes have some bubbles (1 to 2 minutes on each side) Flip carefully with a thin spatula, and cook until browned on the underside. Transfer to a baking sheet or heatproof dish and keep warm in the oven.
7. Continue with more oil and remaining batter. (You’ll have 24 – 26 pancakes)
8. Serve warm, with desired toppings
